Eve and Sebastien took over the Hotel du Palais in 2021.
After almost a year construction work and interior design, we officially opened in February 2022, the boutique hotel located in the heart of Dijon.
After graduating from Institut Paul Bocuse, I had the chance to work in prestigious hotels in South-East Asia, work in two bakeries in France, and a Crèpe restaurant chain in New York.
Well-organized and true lover of Gastronomy, I will welcome you at the Hotel du Palais in Dijon and at Solstice Beaune and assist you in making the most of your stay with us.
Let me guide you through the choice of activities with Chemins de Bourgogne (wine tours), La Cave du Palais (wine cellar) and La Cave Solstice (bar and cellar).

As a Curnonsky Hospitality School graduate, I have always worked in the world of wines and gastronomy, including in London and Paris for Pierre Gagnaire (and others), before opening a wine bar in Pommard, Burgundy.
I am friendly and a real wine addict, ready to take you into the vineyards for an amazing experience, or organize a special and personalized wine tasting at La Cave du Palais.

With a degree in Tourism and a passion for foreign languages, I have enriched my knowledge of English and Spanish through my studies and experience. After spending three years in a 4-star hotel, I developed a real taste for customer service. Today, as a receptionist, I’m here to help make your stay as pleasant as possible. I would describe myself as curious, patient and perfectionist, I’m committed to offering a warm welcome to your visit.

Having grown up in the region of North Yorkshire, from 15 I spent my free-time working in hospitality outside of school, and after completing my A-Levels at 18 years old, I decided to move to Dijon, where my mother grew up. Originally, I wanted to move here to better my French abilities, however over time I fell in love with France, and decided to stay.
Having been with Eve and Sebastien since my first few months in France, I have learnt that nothing beats the satisfaction of a smile on my client’s face! I will always go the extra mile to make your stay with us the best it can be. I am also willing to share any hidden gems in Dijon upon request!
